I played Rogue Squadron and Naboo Starfighter back on a Windows 98 PC with a joystick. There are few things more immersive than playing a flight sim with a joystick.
Also, Galactic Battlegrounds gets a big mention for basically being the game that got me into gaming.
Battlefront 2 had some fun multiplayer as well.
